some people who try this overcook it. My worry would not be the eggs but the potatoes not being done on the opposite side.

Makes me want to install a short order griddle in my house lol. And that always automatically reminds me of Jethro on Beverly hillbillies. When he grew up, he either wanted to be a short order cook or a brain surgeon

Cover. To steam top. Of course this wouldn't work for a large griddle like that.

Haven't made in years, but is easy, just need some leftover cooked potatoes, either boiled or baked plus bacon and eggs.

Fry up some bacon, set it aside on paper towels. Brown potatoes in bacon grease, season with salt and pepper..

Place hash browned potatoes in greased baking dish. Crumble the fried bacon on top. Put some beat up eggs (2 for each person) thinned with a tittle milk, water or cream, pour over bacon-potatoes. Bake in 350 degree oven till eggs are set.

My kids used to love this dish. This was sixty years ago long before frozen hash browns. I think I will cook up some potatoes tomorrow and let them set in the fridge for a day or so and make this dish for my old boy.

Peal potatoes and boil whole just until a bit tender. Then take out and cool and then shred.l on grater. Makes it easier than raw since so much water. Parboiling eliminates the water.

You just reminded me though of the best home fries I ever had. At a diner, in in the bottom of Rockefeller Ctr. They did like you said - boiled the night before so they were cold. Just salt and pepper and paprika. Fry and don't move/turn until crust forms Think kind of potatoes important too. Yukon gold best to me anyway.

Your casserole sounds good ! And you don't need a griddle. Makes me want to make them too!
