Butter Bean Salad from Rachael Ray
2 cans butter beans, rinsed and drained, 15 ounces each
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin, 1/3 palm full
2 tablespoons extra virgin olive oil
1 large lemon, juiced
Coarse salt and freshly ground black pepper

This is especially good for a pot luck. Because I live alone, it tends to make more than I can consume, although I could probably cut it in half. It absolutely doubles or triples very well. I've also made it to serve at the homeless shelter.

Really good and keeps well in the refrigerator for lunches, etc, too. I'll have to try it with butter beans.

Chickpeas. Not sure I'd like it that way, but I'm sure lots of people would.

they're supposed to help weight loss by being extra filling. I just looked, though, and so, to no big surprise, are butter beans. I like nibbling on this salad as a snack.
