When you have a moldy block of cheese ...

,,, if you slice off enough of the moldy outside of the block to get all the mold cut away, is it safe to eat the non-moldy part on the inside? Or should you just throw the whole block away?

It's probably fine, though if anything tastes off, throw it away.

Every year I spent part of the summer surrounded by every dairy product you can imagine.
And of course cheese every where.

Up in Wisconsin dairy country the mold is no big deal, they simply cut it off and eat the rest of the cheese.

A tip: Don't handle cheese too much, it will mold where you touch it.
