Anybody have a cottage pie recipe?

I'm not a gourmet cook. I'll have to use frozen vegetables and quality pre-made mashed potatoes.

Anyone make this comfort food?

Take what vegetables you have - carrots, celery, peas, onions, leeks, mushrooms - cut them into more or less even pieces and put them in a deep oven-safe dish. If you have leftover meat, dice that and put it in too. Make a basic white sauce (or use leftover gravy, or canned gravy if you have to, or your basic cream of mushroom soup (which is essentially what a white sauce is)) and pour that on the vegetables. Cover the whole pie with mashed potatoes, then put in a moderate oven until the vegetables are cooked or the whole thing is heated through. This is one of my go-to ways of using up leftover meats.

When you feel comfortable working with pie crusts you can make pot pies by using a bottom crust, the same fillings, and a top crust!

She uses four layers. Ground beef (cooked with a little Worcestershire sauce) with gravy goes in the pan first. Another variation is to use marinara sauce instead of gravy. Then frozen or canned veggies, green beans or corn, or whatever you have left over. She likes mushrooms but leaves them out because I don't like them. Then mashed potatoes, home made or instant are okay. Cover with foil and bake at 375 for 30-40 minutes or until liquids are bubbly and potatoes are browning. A Pyrex casserole dish is good for seeing the bubbling, or you can stick with a fork to see if it is hot all the way through. Then remove the foil and spread grated cheddar cheese on top and back into the oven until cheese melts. Maybe 10 minutes. Keep an eye on it so the cheese doesn't burn.

I have grandchildren who would kill for this stuff.
