I have never tried it, but maybe steaming the collards before frying them with the bacon?

She fries off 2 slices of bacon with 1/2 a minced onion. She drains the collards of liquid and drops them into the hot fat. Heat through and add a bit of vinegar and hot sauce.

I'm sure I've seen them in the store, but never had them. I think this is because I'm more confident about cooking other greens. I've seen people on TV cook collards (mostly in cooking competitions) and often there's an issue with them.
I like all green vegetables, so I imagine I would like them.
