I used up my leftover cranberry sauce from Thanksgiving

I made an upside down cake and used the cranberry sauce in place of the pineapple.

No one in this house likes cranberry sauce much but me. 🙂. I put the cake in the freezer. Maybe if I need something to bring to a friends’s house I can bring that.

a couple of times and it is so so good! Mmmmm. Enjoy it.

I had essentially forgotten about that. Christmas? Probably.

So the sauce will provide liquid, color and flavor, but I will need a sweetener that helps thicken. Shredded coconut maybe?

The cranberry sauce has some orange zest in it.

Tropical Oatmeal Craisin Cookies.

Initial batch will be for me and hubby. Gotta keep sugar low as he is diabetic.

Maybe skip the craisins, just use the sauce. I have store bought coconut cookies and a rolling pin.

I also cheat a bit with oatmeal by adding Protein Oatmeal that can be used for building "protein balls" with peanut butter.

I have powdered peanut butter too. Would have to taste test that. See if it goes with anything.


Thanks for starting the baking thought train. I don't usually get into this.

Took me all of ten minutes to mix up …. When I defrost it I might add a sprinkle of chopped pecans maybe….

I spread it on select crackers. Sauce with berries or without and I add some dried cranberries. I blend it by hand, but it would probably be even better if I used a mixer. Maybe I will try it on a bagel, celery sticks, pita chips or even as a pretzel dip. Yum.
