Ribollita--the Tuscan Minestrone


Not my pic, but will look like this. Using ciabatta, not the bread depicted.

This is a soup that is made to be reheated. That's actually what "ribollita" means. It has cannellinis, black kale, onion, leek (white and green parts only), carrot, celery, garlic, tomatoes, zucchini, Swiss chard, garlic, and when served, Parmigian-Reggiano on top. Just about all of the vegetables are from my garden. I had to buy the chard, but found a beautiful bunch at WF yesterday.

Ginger kombucha.

I am slow cooking my fave pork sausages from WF to go with it.
Ciabatta rolls would be terrific with this, so I'll pick some up on the way home from work.

For dessert, decaf French roast and raspberries over shortbread with a little whipped cream. Toasted almonds on top.

Angel hair pasta with homemade tomato sauce started with Italian sausage and pepperoni, with meatballs and side salad with balsamic and olive oil.

9. Sausages

We’re anchored in Eastham Creek off the Pamlico River in North Carolina. It was a gorgeous sunny day with 65 degrees and a westerly wind at 8-10 mph. Lovely.

Hot Italian sausages sautéed with potatoes, onions, red & green peppers with garlic and spices. Served on garlic bread. Simple green salad with Romaine, red onion rings, cherry tomatoes and green olives with an Italian dressing.

Tomorrow we’ll sail to Oriental, NC for a couple of days of sightseeing.
