well, my house officially smells like heaven...I just baked a chocolate pound cake

It is really chocolatey too.
Tomorrow I will bake a rum cake.

These are to take to a Silent Auction fundraiser held by my Sunday School Class. I will also offer Cakes to Order in the live auction.

Next week, cake for another Silent Auction, this one online and held by the county Democratic Party.

Christmas week, another chocolate pound cake for family Christmas.

I had 3 cakes unclaimed from the 2021 SUnday School party.

I bake so I don't hit people!

He said when a prospective buyer comes to look at your house, ideally, you should be taking brownies out of your oven just as they arrive.

I have long COVID and one of the things I can still taste is chocolate. That sounds delicious 😋.

I had misplaced my original recipe (actually the entire dessert section of that cookbook had vanished) so I went hunting and found this one on Pinterest https://www.foodnetwork.com/recipes/trisha-yearwood/chocolate-pound-cake-2310240 I do tweak the recipe just a bit: I add 4 squares of baking chocolate (melted and cooled) and 2 tablespoons of strong instant coffee*. It's the only reason I keep instant coffee in my house.

This is the same recipe my husband's grandmother used. She would send cakes to any of her grandkids who would not be with her at Christmas or on their birthdays and the cake always appeared at Christmas until she grew too frail to bake. Now I have to take it to Thanksgiving and Christmas or the siblings won't let me in the door! Funny thing is I had been baking the same recipe from that missing cookbook before I ever knew the history of chocolate pound cake in the family. The woman who put the recipe in the cookbook called it "Serious Chocolate Pound Cake".

Pinterest is a treasure trove! My Pinterest feed is huge!

*coffee enhances the chocolate taste but you can't tell it's there. Since I learned this, I add a bit of coffee to all my chocolate baked goods.

Fudge Brownies

1 stick butter (no substitute will be half as good)
1 cup sugar
2 eggs, lightly beaten
3/4 tsp salt
1/2 cup cocoa
1/2 cup flour
1 tsp vanilla
1 cup chopped nuts (optional)

In large microwaveable bowl, melt butter. (sometimes I put about 1 tsp of instant coffee crystals with the melted butter) add the sugar and mix well (by hand).
Let cool and stir in the eggs and salt.
stir in the cocoa until well combined, then the flour . Stir until there are no white streaks, then add the vanilla and nuts. Bake in an 8 or 9 inch pan.

Bake 20 minutes at 350. I always check them at 15 minutes just in case.

Let them cool until you can cut them cleanly. These are killer!
