Eggplant Parmesan with tomato sauce.
Romaine and arugula tossed salad with Daikon radish, red pepper, and yellow pear tomatoes. Olive oil-lemon-herb vinaigrette.
Dessert: raspberries over a toasted waffle with eggnog Greek yogurt and almonds on top. Shaved dark chocolate on top, too. Earl Grey tea.

(411 posts)because it's Saturday. I had one of my favorites, Bun Bo, which is a cellophane noodle salad with beef and herbs. Came home to start a large pot of soup with 2 gallons of poultry leavings from the freezer. Chicken and turkey; necks, backs, wing tips and bones.
It's got 4 hours to go before I strain it off, put the broth in a covered smaller pot and stick it out in the enclosed back porch to sit overnight. (It's too big for the refrigerator.) Tomorrow, I'll boil it down by half and can it. I'm hoping for 8 pints of concentrate for the pantry, although I'll be happy enough if I get 7.
Anyway, the whole house smells of it, and it's making us really hungry for soup.
