What's for Dinner, Tues., Jan. 10, 2023

Eggplant slices (breaded) with tahini sauce. Toasted pignoli and mint leaves over the top.

The tahini sauce has freshly squeezed lemon juice, lemon zest, garlic, sea salt, and pepper.

Tossed salad with baby spinach, celery leaves, red tip lettuce, and a little Bibb lettuce. Red onion, red and yellow peppers, cucumbers, cherry tomatoes, celery. Italian vinaigrette.

Dessert: French roast decaf and melted raspberry chocolate over a little slice of panettone.

TJ is baking some lasagna. It has ground beef and tomato sauce. I don't know about all the ingredients, but I smell garlic and oregano.

1.5 lbs of fresh tuna steaks, grilled
1 lb of elbow macaroni
1 large jar of Manzarilla Salad pimento green olives, halved
Mayo, to taste

Cook elbows to al dente, drain. Add entire contents of olives including liquid.
Stir well. Add mayo, but not too much.

Cut up thin slices of grilled tuna. Add to salad.

Stir well. So good!
