What's for Dinner, Mon., Jan. 23, 2023

Roasted chicken thighs in parmesan-garlic-herb sauce.

Sheet pan veggies, tossed in olive oil and herbs (thyme, sage), garlic. Yellow crookneck squash, broccoli, shiitake mushroom, onions, garlic.

Berry nirvana kombucha.

Dessert: chocolate cookies made with almond flour. Mug of hot white chocolate to drink.

No air fryer this time. Lightly flour and season and sauté. Then make a sauce in the pan to simmer the thighs in: butter, onion, mushroom, garlic, then a little white wine, and then cheating with a can of cream of chicken and herbs and some milk. Extra, fresh rosemary. Covered simmer until super tender. Jasmine rice and sautéed spinach.

I'm feeling crummy with a sore throat, and that always makes things better. I make it in the Instant Pot. Served with all the condiments of course--sriracha, hoisin, fish sauce, french fired onions, won ton strips, whatever.

Every culture has some kind of chicken soup(or some slose relative) for when you're sick

Fresh cole slaw and German potato salad.

And today was baking day, so there is a loaf of fresh bread in the house.
