diced onions, carrots, garlic and garam masala, cumin, and curry powder. I will sprinkle chopped toasted almonds on top. It is delicious, but it looks like hell. What do you do to improve on an ugly dish?

You might add diced red bell pepper and/or tomatoes to your veggie assortment

Finely chopped red pepper also adds good color, but can bleed a bit if not added when simmering or quickly sautéed and then added.

Thinking that I just need to get over the grey/brown color and just enjoy the delicious flavor.

or chopped parsley sprinkled over the top. A sprinkle of green can improve the looks of brown on brown.

The bright red color will liven up the appearance, and the flavor as well.
