I eat avocado toast literally every day of my life. My go-to is pretty simple, with salt, pepper, and crunchy onion bits, but I sometimes put on tomatoes or thinly sliced radishes or go for a vegan version of a BLTA. I'm going to recreate her margherita and Mediterranean versions, and also add some lemon olive oil the next time I put radishes on mine.

My latest favorite vegan bacon is Smoky Bacon Tempeh Strips by LightLife. At restaurants I’ve had delicious bacon bits made from mushrooms, but I’m not much of a cook and go with easy options. What bacon substitute do you like?
