What's for Dinner, Fri., Mar. 31, 2023

Cold shrimp appetizer with cocktail sauce, lemon.

Roasted tomato-Persian cucumber-mozzarella salad. Caesar dressing.

Breaded pork cutlet with applesauce.

Corn (fresh) with butter and scallions.

Dessert: Hot spicy chai tea with half 'n half.

Our mooring neighbors are rowing over later for dinner.

Hush puppies with butter.

A rack of baby back pork ribs and half a chicken slathered in Stubbs BBQ sauce.

Corn on the cob.

A big mixed green salad.

Beer, wine, ice tea and water.

Our guests are bringing dessert.

Well, that is the plan right now. The noodle dough in resting in the fridge in their appropriate log-type size. We'll biang them and cook then toss with sauce (already made) and top with veggies, spices and hot oil.

Looked interesting on the video! This is a pure experiment and hopefully it works. If not, we'll have to call out for pizza! hahahahahaha

Al is out running errands and he just called to ask me if I'd like him to bring home some sub sandwiches for dinner.


Is that a trick question? Make mine a small cheeseburger sub, with everything on it: ketchup, mustard, lettuce, onions, pickles and hot peppers. American cheese.

Ice cream for dessert.


I made a streusel coffee cake, but that is for tomorrow when Al's friend comes for a visit.

The sauce is simmering, and I'll make the noodles in a while. Meanwhile, I'm going to start a pot of beef, barley, and vegetable soup that we'll portion out and freeze later. Gotta do it while I'm feeling ambitious!

had a decent sized lunch so we're splitting a little salad kit. It's hot and we're expecting rain and I just want to sit in front of a fan.

It's just above freezing and we've got the kind of rain that feels like liquid snow, along with thunder and (presumably) lightning. Just traveling home from work, I got chilled to the bone. So - Grilled cheese sandwich, beef barley soup and a kosher dill.

Comfort food.

During the last week-long cold snap, I luckily had put away some black bean soup in the freezer, that I pulled out for supper most nights... along with doing a grilled cheese sandwich to go with. Along with some added Cotillo hot sauce, it definitely hit the spot! I love soup, and doubly so when the weather is cool.

We're going into a "warm-cool-warm-cool" series of a few days. I'm doing a meatloaf tonight with au gratin potatoes and early young peas. That'll probably hold us for a couple of days, at least.

Also on the menu for the week is stuffed Jumbo shells... although I do add meat to my ricotta, mozzarella, and parmesan stuffing mix. And, since I ate all the black bean soup last week, I think I'll make a smaller pot of it, as well as a small pot of beef/vegetable soup just to have waiting in the freezer for those nights when I absolutely cannot even think about cooking!!!

Also baking a cake for dessert... that is, if hubby ever gets home from the grocery store! (LOL)
