Using up odds and ends

I had a rummage through the pantry and the fridge this morning and, among other things, came up with:

Half a cup of beef taco filling
Half a jar of salsa
A jar of queso, which is about to expire
Half a bag of tortilla chips
Dry black beans
A sad-looking green pepper plus two jalapeño peppers
A block of mild cheddar

So I put some beans out to soak. The plan for tonight is to make sauce with the salsa, beef, and peppers, then layer the chips with the sauce, the beans, and the queso. I plan to cover the whole thing with cheese and then bake.

It always makes me happy when I come up with a plan for using things up.

it's time for macaroni and cheese. Sometimes with as many as 8 or 10 different cheeses. My wife makes the mac and cheese then puts it in a roasting pan and adds panko bread crumbs to the top and bakes it. Sometime we add some meat like bacon or kielbasa sausage. It's always good, and never exactly duplicated.
