When making scrambled eggs,

How many of you remove those little white thingies that stick to the yolk?

For years I thought they were like zip-ties to keep the yolk together, but it turns out they're to keep the yolk centered in the shell. That's why there are two of them. They're called chalazas.

Even in my most OCD moments,, I can resist that urge. And especially for scrambled.

Ok but being serious, if, when dumping the egg out of the shell, if those "chalazas" find themselves hung up on the eggshell, I will tip the shell to capture them. But I don't know why I do that. Must be some ancient genetic memory or something.

I have a special way of whipping and pouring to trap them. I won't eat any egg near that.

I mean I can see it, but it doesn't affect the taste of the egg. Sometimes the texture is slightly gelatinous, but so what?
