Granola recipes?

I made some granola today, based on the recipe from this site http://lynnskitchenadventures.com/lra/nut-free-homemade-granola/
with a few mods - halved the amounts, added some raisins and dried papaya, used less coconut, and substituted molasses for honey. I also cooked it for less time, leaving it in the oven for ~10 mins after turning off and letting it cool for about 1 hour. It seemed to be done after that time.

Nut Free Homemade Granola

* 1/3 cup brown sugar
* 1/3 cup oil
* 1/2 cup honey
* 2 teaspoons vanilla
* 3 cups old fashioned oats
* 4 cups quick oats
* 1 cup coconut (optional)
* 1 teaspoon cinnamon

1. In a small saucepan mix together brown sugar, oil, and honey. Bring to a boil. Remove from heat and add vanilla and cinnamon.
2. In a large bowl combine oats, coconut, and sugar/oil mixture.
3. Stir until oats are well coated and everything is combined.
4. Spread into 2 9×13 pans.
5. Bake at 350 degrees for 10 minutes.
6. Stir, turn off your oven, and put the granola back into the oven for 3-4 hrs. The heat left in the oven will finish cooking this. I love this because I can make this and walk away for a few hours without having to continually stir the granola.
7. Remove from oven after 3-4 hours. Let cool and store in an air tight container.

In a large baking pan, mix:

3 cups rolled oats
1 cup steel cut oats
1 cup sliced almonds
1/2 cup chopped walnuts or pecans
3/4 cup shredded coconut
3/4 cups sunflower seeds
1/3 cups sesame seeds
1/4 cup flax seeds
3/4 cup wheat or oat bran or a mix of both
1/2 cup toasted edamame
1/2 cup roasted dried chickpeas
1/2 cup roasted spiced pumpkin seeds

stir all together

In a bowl, combine

1/4 cup water
1/4 cup canola oil
1/2 tsp salt
1/3 cup brown sugar
1/4 cup maple syrup (the good stuff)
1/4 cup agave syrup
1/4 cup honey
1/4 cup molasses
2 tsp or more cinnamon, or to taste
1/2 tsp nutmeg
1/2 tsp ground ginger

stir this well, and pour over the dry stuff, mixing well.

Bake in a preheated 300 degree oven for 1 1/2 hours, mixing well every 20-30 minutes - esp. scraping and turning from the bottom, to prevent sticking and burning. At the end of the time, turn the oven to 325 and cook another 10-15 min - it will become golden brown - watch for burning.

Let the granola cool, then mix in 1 cup golden raisins, 1 cup dark raisins, 1/2 cup currants, 1/2 cup chopped dates, 1 cup of craisins, and 1/4 cup dried blueberries and 1/4 cup chopped dried cherries....and other fruit such as dried apricots if you like.

Stir it all together well and store in a covered container. this makes ALOT!

We like to add this to our usual cereal - I like some of the Trader Joe cereals like their Raisin Bran clusters and high fiber fruit mix - 1 cup of the cereal, adding 1/4 cup of the Granola....perfect way to start the day!

I'm not sure. Hopefully someone else can enlighten us. I only used one kind because that's all I had.

It's not bad though. Next time, I'd cut the sugar down, maybe by half, and add more stuff like flax or pumpkin seeds. Afterwards, I saw mention of pumpkin spice granola, so I might look up a recipe for that.

3/4 cup salted cashews, chopped
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons agave nectar
1/4 cup vegetable oil
1/2 teaspoon salt
1 cup craisins

Preheat oven to 250 degrees F.

In a large bowl, combine the oats, nuts, and brown sugar.

In a separate bowl, combine agave, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer into a large bowl. Add craisins and mix until evenly distributed.

It's the best granola I've ever had.

9 bucks for a small packet at all the best gourmet stores in NYC. Luckily she has shared the Early Bird recipe with the NYT and Martha Stewart. The EV olive oil and finish with salt makes a huge difference.
I usually use maple- agave syrup instead of pure maple, but it's great either way.
Instead of pecans, you can sub macadamias and add dried mango pieces. Or pistachios and sour cherries. If they are toasted, add after baking.

Ingredients

3 cups old-fashioned rolled oats
1 cup raw pumpkin seeds, hulled
1 cup raw sunflower seeds, hulled
1 cup coconut chips
1 1/4 cup raw pecans, coarsely chopped
3/4 cup pure maple syrup, preferably Grade A
1/2 cup extra-virgin olive oil
1/2 cup packed light-brown sugar
Coarse salt
Directions

Preheat oven to 300 degrees.
Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a rimmed baking sheet. Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 45 minutes.
Remove granola from oven and season with salt. Let cool completely before serving or storing in an airtight container for up to 1 month.
