What's for Dinner, Thurs., June 26, 2025

Impossible (plant-based) burger with cheddar cheese on English muffin with lettuce & tomato.

Hope to find cassava chips when I'm out, but if not, maybe a few sweet potato fries.

Tossed vegetable salad with ruffly red lettuce, cukes, tomato, and peppers.

Kombucha: cherry.

Dessert: chocolate square and decaf coffee with half 'n half.

I went out with my granddaughter yesterday and we went through the drive through at Taco Bell. They gave us about 20 packs of hot sauce! I used 3 of them for seasoning, plus other spices I added some broccoli, onions, mixed vegs and garlic. Had noodles on the side.

I had some of the chocolate syrup I made on ice cream. Dessert before dinner

Steam-fried in evoo and veggie broth: chopped onion, red and yellow bell pepper, sliced carrots, finely sliced cabbage, sliced mushrooms and minced garlic. Black beans were added when the veggies were done. I seasoned the veggies with Penzy’s Tuscan Sunset herb blend. Tossed the veggies with cooked whole wheat penne. After plating the dish was topped with vegan parmesan. Kind of like a primavera but without tomatoes. Cheers!🥂

I made it yesterday morning so the kale was softened and not too chewy. I used lacinato kale and added cannelini beans.

It's too hot to cook here also!
