What's for Dinner, Mon., June 30, 2025

Posting early due to working late.

I had an Impossible burger (plant-based) topped with Swiss cheese on a bagel which I sliced into three thin slices. Had the burger on one slice with lettuce and chipotle sauce. Sliced tomato on top. Pickles

Have a union meeting where they're serving "refreshments," not dinner. So maybe a little snack around 6.

Kombucha, unflavored.

1. Cold tuna pasta salad with Italian salad dressing

Similar to this recipe, but I used 1/2 pkg of rotini pasta

Tuna Pasta Salad
Ingredients

1 lb. Garden Rotini Pasta, cooked, drained (do not rinse, I briefly rinsed ) and cooled
1 (5 oz.) can Bumble Bee Albacore Tuna with Sun Dried Tomatoes in Olive Oil--I used plain old alabacore
1 (2.25 oz.) can sliced black olives, drained
2 Tbsp. finely chopped red pepper
2 Tbsp. finely chopped red onion
1/4 cup drained, chopped artichoke hearts
1/2 cup finely chopped broccoli florets--passed
4 oz. crumbled Feta cheese
1 cup of your favorite Italian dressing ( +1/4 cup extra to stir in after it sits a while)
Optional additions: finely chopped cucumber, zucchini, summer squash, and cherry tomatoes
Instructions

In a large mixing bowl, combine all of the ingredients.
Stir well, cover and refrigerate at least 4 hours.--IMPT, the flavors need time to meld
Overnight is even better because the flavors really get to mingle well 🙂
When ready to serve, add a little more Italian dressing if needed or desired, stir and serve.
Makes a great lunch or perfect side dish with dinner or for a Family BBQ.
Serves 10-12.-I cut back on the Pasta to 8 or so ounces so I have less numbers of servings

To drink I am experimenting with 2 ounces if an Italian blood orange soda in 12 ounces of San Pellegrino sparkling water, the soda is too sweet to my taste
