I want to thank Emile for covering while my sister was visiting me for a long weekend.

I made a bisquick spinach tomato onion mushroom casserole yesterday so I will be finishing that today with pineapple cubes, cold brew coffee for later this morning.

1. WB Iris

My breakfast will be usual, 2 eggs with extra sharp cheddar.
Maybe I should explain, how I make these.

My electric fry pan , get it hot, Crack the eggs and cheddar on top, immediately.
Spatula, one fold, and you still have the yolks, and the cheddar is melted , 3 mins, done.

2. Cold Earl Grey tea

Yum, I would enjoy that casserole.

I have some beautiful broccoli rabe I’ve grown, so I will sauté it with garlic and put on top of a pita with melted mozzarella.

3. Black coffee and a toasted bagel with cream cheese.

Big day planned today. Our son is bringing the two granddaughters here for a visit. The little one wants Grandpa to go swimming with her in the pond.
