Tuscan White Bean Soup, which I made with stock I had going from Deborah Madison's Greens Cook Book.
This stock has just about every summer vegetable in it you can imagine, from summer squash, chard, to eggplant. It asks for quite a few herbs, which I fortunately have: basil, marjoram, parsley. She got me on lovage, though. Don't have that this year.
It turned out to be quite delicious and I'll even have a little left over for tomorrow.
Salad is tossed greens, meaning butter lettuce, baby spinach, and ruffly green. Pear tomatoes, cucumber, and red onion with lemon vinaigrette.
Dessert: a few slices off a chocolate croissant and cold Earl Grey tea.

(25,126 posts)Romaine lettuce as a base. Thinly sliced red onion rings, cucumber slices, orange and green pepper slices, hard boiled egg slices and garlic croutons topped with pine nuts then dressed with a mustard/olive oil/salt & pepper/white wine concoction. The tuna has been marinating in a light soy sauce and will be pan seared then sliced ultra thinly before being laid artfully on the salad, (snicker!). Bread and butter on the side.
Ice cream and cookies for dessert.

Lucky you. I'd have to pay $6 for one. Santa Claus and Christmas melon are the same.

And look! They're almost all sold out!

(1,996 posts)Tonight I ordered a fried soft shell crab with mixed vegetables and Thai basil sauce. Brown rice accompanied the dish. Was great. Cheers! 🥂

(11,450 posts)Half of the remaining tri-tip, cut into small slices and marinated in a mix of sweet soy sauce/rice vinegar/soy sauce, the sauteed with slivered zucchini, onions, tomatoes, and green beans, served with rice.
Now what to do with the rest for tomorrow...
