Looking at chili crisp recipes...what does "pulse" the chiles in a spice grinder mean? TIA.

1. It means turning the chopper on and off quickly so you control the size of the pieces.

If it mattered in your case I would say 2-3 full turns, then pause, and repeat until chiles are the desired consistency.


I don't believe it matters with a hand grinder

6. In my case, it means twist the cap

back and forth to stop and start the motor and chop or grind the chiles to the consistency I prefer.

I have a 1970s vintage Cuisinart grinder. Nope, they don't make my model any more, Pity, it would chop 1/4 cup garlic and 1/4 cup ginger together in one go. It's still working fine, too.
