Garden stuff!
First off, hummus sandwiches with tomato. Hummus is pine nut. Pita bread.
Charred corn. I made some this a.m. and it was so good I decided to continue with dinner. With this, you put the charred corn (used a cast iron skillet), in a bowl and toss it with a little lime mayo. Top it with feta, cilantro, and pickled jalapeno.
Tossed green salad with new sesame seed dressing. Has cucumbers, red onion, tomato, green pepper, and celery.
Cherry ginger kombucha.
Dessert: root beer float ice cream bar.

(23,453 posts)I used up the pasta I made to eat with the eggplant casserole, the super hot cheesed stuffed hot peppers I couldn't eat on their own, deli chicken, garlic, fresh onion, mushrooms, and sweet chili sauce. It was pretty good. And guess what? I have leftovers! lol
Ice cream.
Have a great evening

(1,996 posts)I parboiled a couple red bell peppers. I made a stuffing by steam-frying chopped onions, celery, carrots and garlic in evoo and veggie broth until they sweated. I added cooked red quinoa and Wegmans plant-based sausage crumbles and chopped fresh oregano, basil and parsley. I stuffed the peppers and baked them for about 45 minutes. Cheers!🥂
