What's for Dinner, Thurs., Sept. 18, 2025

Since it's German week at Aldi, I stopped by and stocked up on the appropriate goodies:

Caramel apples
Pork Schnitzel
Sparkling Apple Cider
Apple Cider, non-sparkling
Pumpernickel bread

For tonight, I'm having pork schnitzel with applesauce.

However, first is an appetizer: pumpernickel bread, toasted and cut in fours, and topped with red pepper goat cheese and also truffle goat cheese. On top is a little scallion and a few chopped dill springs.

At some point, a salad, which will be sliced cucumber, cherry tomato, and red onion. Vinaigrette.

Kombucha: mixed with apple cider.

For dessert: half a slice of carrot cake with cream cheese frosting. A caramel apple.

I breaded and fried white chickens chunks, and dipped them in Aldi Nashville hot ranch. Used the last of the rice and made some fried rice, with veggies. Cucumber kimchee. I wish my cook (me) would do that all the time!

No dessert today

5. Snap peas and pasta

Steam-fried in evoo and veggie broth: chopped onion, sliced carrot and minced garlic. When done I added sliced mushrooms and trimmed snap peas and cooked until just done then tossed in cooked whole wheat linguine and air-fried tofu cubes. Topped with crumbled seitan bacon and vegan parmesan. Cheers!🥂

Homemade. Oil and garlic instead of tomato sauce, onion and the last of the Italian sausage, and Too Much Cheese. Seasoned with oregano and red pepper flakes.
