Tofu Tikka Masala. The recipe is from Radhi Devlukia.
It has curry powder, butter, cabbage, garam masala, turmeric, chili powder, and tomato paste. Plus a can of full-fat coconut milk.
Cilantro leaves, but I'll use my cilantro pesto.
The recipe says to serve it over rice but I'm going to use noodles.
Apple cider flavored kombucha to drink.
Dessert: honeydew melon.
It's going down to 45 tonight so I will have to bring in my basil pots. They will stay in for 2 nights and then go back out because the temperatures are rising.
Note: the link above has many vegetarian Indian recipes! Lots of good pics, too.

Vietnamese-inspired bowl is a juicy fish pattyshrimp and salmon seasoned with lemongrass and a punchy mix of umami-rich sauces. But what surrounds it is just as compelling: tangy pickled carrots and cucumbers, ribbons of shredded kale, a flurry of fresh cilantro and Thai basil, and golden-fried shallots. It all comes together over springy rice vermicelli, ready to soak up the sweet-and-sour brightness of a carrot-studded Nước Mắm sauce.

NJCher, that tofu tikka masala dish sounds great. Thanks for the link.
