What's for Dinner, Thurs., Oct. 30, 2025

I have a dinner to go to tonight. It's called the annual "Gala." Bleh. But the food might be good, judging by the catering establishment. I have to dress up, another bleh in my book. But hey, it's part of the job of being on the executive board of my union, so off I go. Even in this rain.

At least I get to go with a friend and we'll have fun catching up.

I don't know what they're serving, but there will probably be 2 or 3 choices. Will try to post back if I make it back early enough.

Hope you C&B'ers enjoy a nice, safe, quiet evening with whatever you decide to cook.

1. Green beans

My pole beans in the garden gave me enough for a mess o' beans a few days ago (probably the last since KY is getting chilly and dark). I strung and broke those up this morning and will add some navy beans and potatoes. They cook quickly in the Insta-pot and then I put in some olive oil along with thyme and rosemary (and whatever other herbs I think of).

He cuts up porterhouse steaks, red potatoes, small peas and carrots and other delicious stuff.
Plus he's great with the spices.
If he ever did-me-wrong, I'd divorce him....No...I'd keep him just for the damn stew!

1 28 oz can crushed tomatoes, 1 lb bag organic baby carrots, & 1 green pepper.

Really easy. Steam fry ground chx with 1/2" or so water, then chop up.

Dump everything else in, chop up cabbage, add to the mix.

Take a nap & wa-la! It's done. Lol

Super quick & easy& tastes just like the stuffed cabbage rolls that take forever to make!



On edit: loads of garlic powder & Italian spice blend.

Besides cauliflower and potatoes, my version also contains chopped onion, green bell pepper, mushrooms, minced garlic and ginger. I added cannellini beans and used Patak’s curry paste to make the sauce. Cheers!🥂

I really prefer homemade seitan, but sometimes I fall for a sale (fie on you, Publix!) and stock up on BOGO items for lazy meals. The Daring brand seitan seems to me to be weirdly tough—or maybe you’re just not supposed to do more than heat it up? I think they overmix and the gluten just turns out extra hard to chew.

Nevertheless, tonight was a lazy night and I heated some up in a skillet with spicy BBQ and jalapeño sauce and wrapped it in a WW tortilla. Made for a decent stomach-filler, and had enough flavour to distract from the texture issues.

I do know what my weekend kitchen project will include, though.
