Honey Roasted Parsnips Sweet Potatoes, and Apples
Gloria Yurkiewicz, Washington Boro, PA
Makes 4 servings
Prep. Time: 20 minutes
Cooking Time: 5 hours
Ideal slow cooker size: 3-qt
1 1/2 cups Parstips peeled and cubed
1 large sweet potato, peeled and cubed
2 firm red apples, cored and sliced thick
1 Tbsp. coconut oil
1 Tbsp. honey
2 Tbsp. gluten-free soy sauce or Braggs liquid aminos
1/4 tsp. ground ginger
1. Mix parsnips, sweet potatoes, and apples in greased crock.
Add remaining ingredients and stir.
2. Cover and cook on low for 5 hours, or until parsnips and potatoes
are tender when poked with a fork.

Lentil Spinach Soup
Marilyn Widrick, Adams, NY
Makes 4-6 servings
Prep. Time: 10 minutes 4
Cooking Time: 2 1/2 hours
ideal slow cooker size: 6-qt
1 Tbsp. olive oil Adorice Heat .
| small onion, diced
| tsp. ground cumin
14 1/2 oz can of diced tomatoes,
14 1/2 oz. can gluten-free vegetable broth
1 cup dry lentils
2 cups waver
1/4 tsp. salt minutes.
1/8 tsp. pepper
5-oz. bag fresh spinach, chopped
1. Heat 1 Tbsp. olive oil in cooking pot. Add carrots and onion.
Cook 8~10 minutes over medium heat.
2. Place carrots and onions in slow cooker. Add cumin diced
tomatoes, vegetable broth, dry lentils, water, salt, and pepper.
3. Cover and cook on low 2 hours.
4. Add spinach. Cook on low an additional 15-25 minutes.

Slow Cooker Tomato Soup
Becky Fixel, Grosse Pointe Farms, MI
Makes 8 servings
Prep. Time: 15 minutes
Cooking Time: 6 hours
Ideal slow cooker size: 6-qt.
6-8 cups chopped fresh tomatoes
1 medium onion, chopped
2 tsp. minced garlic
1 tsp. basil
1/2 tsp. pepper
1/2 tsp. sea salt
1/2 tsp. red pepper flakes
2 Tbsp. Massel chicken bouillon
1 cup water
3/4 cup fat-free half-and-half
1. Combine your tomatoes, onion, spices, chicken bouillon, and 1
cup of water in your slow cooker.
2. Cover and cook on low for 6 hours.
3. Add in your 3/4 cup fat-free half-and-half and combine all
ingredients with an immersion blender. Serve hot.

Herbed Flounder
Dorothy VanDeest, Memphis, TX
Makes 6 servings
Prep. Time: 10 minutes
Cooking Time: 2-3 hours
Ideal slow cooker size: 6-qt.
2 lbs flounder filets fresh or frozen
3/4 cup gluten-free, low-sodium chicken broth or stock
2 Tbsp. lemon juice
2 Tbsp. dried chives
2 Tbsp. dried minced onion
1/2 - 1 tsp. leaf marjoram is flaky.
4 Tbsp. chopped fresh parsley |
1/2 tsp. sea salt
1. Wipe fish as dry as possible. Cut fish into
potions to fit slow-cooker.
2. Combine broth and lemon juice. Stir in
remaining ingredients.
3. Cover and cook on high 2-3 hours, or until fish is flaky.

Really! I love when people on DU share recipes. This is good as having neighbors, friends, family sharing recipes!

I kinda post ~8 recipes a day... plus peripheral recipes (sauces, crusts etc)
so I guess i love it too!
