What's for Dinner, Sat., Dec. 27, 2025

I roasted red and yellow peppers and will add a feta cheese block and garbanzos. Chopped herbs. I love this dish and it's so easy.



Salad is tossed red and ruffly greens with tomatoes, cucumber, and red onion. Green Goddess dressing, homemade.

Kombucha: cherry ginger.

Dessert: Vanilla Haagen Daz with fresh blueberries, chopped crystallized ginger, and toasted walnut halves.

I steam-fried chopped scallions and sliced mushrooms. When done I stirred in Just Egg, a liquid plant-based egg product that thickens up and tastes really close to scrambled eggs. I then added some chopped microwaved Morningstar Breakfast sausages. I spread the scrambled egg/mushroom/sausage mixture on lavash flatbread and gave it a squirt of hot sauce before folding up the burrito. I also made air-fried sweet potato nuggets as a side.
