but it is actually a very flexible veg heavy healthy Mexican inspired meal. Ground beef, zucchinis, onion, peppers/chiles of choice, some garlic, a can of chopped tomatoes or fresh if handy, a can of el pato jalepeno sauce (non negotiable for us) served with warmed corn tortillas and/or rice - both tonight since we received a rice cooker for x-mas, trying brown rice tonight. it did white jasmine beautifully. fresh cilantro, queso fresca, limes and more el pato on top. desert could be a frozen cherry pie if somebody gets going on it soon, I am not feeling it personally LOL.

with a mustard glaze. Aldi’s frozen wild caught skinless pink salmon is a bargain. Not as succulent as sockeye, but not bad, considering the price. Also made steamed cabbage and mushrooms and air-fried sweet potato nuggets. Cheers!🥂
