What's for Dinner, Sunday, Feb. 8, 2026

Pizza and tossed green salad.
I checked out this book from the library called Vegan Pizza, by Julie Hasson. It has some good ideas, but because I don't want to go out for ingredients, I'm using her "Pub Pizza" recipe. It has mozzarella, vegan burger crumbles, sliced red onion, and broccoli florets.

Kombucha: blueberry basil.

Dessert: Apple blossom (TJ's) with honey vanilla Greek yogurt. Decaf coffee.

2. Roasting a chicken.

I mixed butter with salt, thyme and parsley and smeared it everywhere. (On the chicken.) It's in the oven now. There'll be lots of leftovers for the week. I might roast a potato or two along with it.

I'm trying a side dish from one of my vintage cookbooks by Ambrose Heath. The editor's intro was from a few months before English rationing finally expired, and the theme is recipes from other countries that might help to make limited dinners more interesting. My mom got it from a library sale for 50 cents and I inherited it.

It's cauliflower florets in a savory custard (caramelized onion and parsley). I'm not exactly sure how it'll work out, but I need to get more and better veg recipes, since we're going to be depending on them more this year (and possibly future years). My main concern is the ratio of egg to liquid, even though I'm going to use the lesser suggested amount of eggs (mine are large and I don't know what size theirs were). Unless the cooked cauliflower exudes a fair amount of liquid, this is going to be quite dense. But DH likes cauliflower, so it's worth a try.

Refrigerator clean out:

Cooked a pan of brown rice~
Sautéed red and yellow peppers with shallots, added pieces of roasted chicken ~
Tossed in leftover homemade cream of mushroom soup, added ground sage~
Side of beets~
Made chopped salad with iceberg lettuce, tomatoes, carrots, black olives, feta~
Dressing- olive oil and red wine vinegar~
Lemon water to drink~
Dessert later- homemade sour cream/lemon cookies with hot cocoa~
Nothing fancy, but refrigerator has fewer leftovers and the meal tasted good.

my husband and son get done unloading all the goodies they brought back from the Twin Cities, from Trader Joe's, Midway Liquor, and the big Asian supermarket we like.

Detroit style made in industrial trays. Thick chewy crust, sweet sauce, vegan cheese, mushrooms, onions and black olives. Go Seahawks! Cheers!🍻
