What's for Dinner, Sun, April 19, 2026

It's cool and raining off and on here, precluding much outdoor work, so I thought soup would be good. I made Tuscan white bean soup. It has the usual vegetables: carrots, onions, peas, broccoli, spinach, onion, parsley. I will grate Parmesan over the top and mix in fresh herbs such as oregano and basil.

Zucchini Oat bread, which is sweetened only with dates and raisins. Most zucchini bread recipes call for at least 3/4 cup of sugar, so I like this recipe. The oats give it structure so it doesn't crumble so easily.

Kombucha, pineapple-orange.

Keeping it simple here for dinner. I’m just going to do baked potatoes with sour cream and cheddar cheese.
Perhaps thaw out some beef with BBQ sauce i made earlier this week to add on top.

Chance of frost again tonight. Got down to 33° this morning. Need to get down to the garden again, and cover up my strawberry plants before dark.

on some baby arugula. That seemed kinda skimpy, so I think I'll make some cornbread to fill things out.
