What's for Dinner, Sun., April 26, 2026

Strawberry (organic) romaine salad with feta & toasted sliced almonds. Olive oil vinaigrette; has shallots.

Eggplant chipotle sandwich with mozzarella on dark pumpernickel rye. This is my own sandwich recipe I made up myself.

Chickpea pasta macaroni and cheese. Chickpea pasta is low GI.

Skipping dessert tonight. Have annual bloodwork tomorrow a.m.

Making baked beans and macaroni and cheese/ baked style with a creamed white sauce./ extra sharp cheddar cheese...

Solo for a couple of days of work.

Rigatoni with a carbonara sauce. Green salad with tomatoes and red onion. Garlic bread. Cookies and a brandy.

with carrots, turnips, peas and celery. Buttermilk biscuits from scratch. We drink white wines almost exclusively, but I found a white Zinfandel (rose colored) to have with this.

4. Smoked Tofu Wraps

Lavash flat bread slathered with homemade balsamic-walnut dressing. To this I added Soy Boy sliced smoked tofu, sliced tomatoes, red onion, avocado slices, vegan cheddar and a large 2 fisted handful of organic spring mix before rolling the wrap up tightly. Unfortunately much of the spring mix had an over abundance of arugula which I positively can’t stand. It’s funny, out of all the fruits and vegetables we consume arugula is about the only one I don’t enjoy eating. Cheers!🥂

Ingredients

For the pork & marinade:
▢4 oz. pork shoulder (finely julienned)---I used a thinly sliced boneless pork chop
▢1 tablespoon water
▢Pinch of salt
▢2 teaspoons vegetable oil
▢1 teaspoon cornstarch
For the soup:
▢1 to 2 dried red chili peppers (optional)-I used red pepper flakes
▢0.3 ounce dried lily flower (rehydrated, ½ cup after rehydrating)- didn't have
▢0.3 ounce dried wood ear mushrooms (1/2 cup after rehydrating & slicing)-didn't have
▢0.3 ounce dried shiitake mushrooms (1/2 cup after rehydrating & slicing)-I used extra

I added some sliced bok choy, sliced white button mushrooms & a few shredded carrots

▢4 ounces fresh firm tofu
▢4 ounces bamboo shoots
▢1 large egg
▢1 scallion (finely diced)
▢8 cups low sodium chicken stock
▢½ teaspoon salt (or to taste)
▢¼ teaspoon sugar
▢1 to 2 teaspoons fresh ground white pepper (or to taste)
▢2 teaspoons dark soy or mushroom soy sauce
▢1 tablespoon light soy sauce or seasoned soy sauce
▢1 teaspoon sesame oil
▢1/3 to ½ cup white vinegar
▢1/3 cup cornstarch
▢¼ cup water
