(11,924 posts)The family thought it was awesome. I used chicken apple sausage, but I think a more 'sausage-ie' taste would work a bit better OR you could substitute a few drops of liquid smoke and leave the sausage out.
2 T extra-virgin olive oil
1 onion, finely chopped
3 c chicken broth
3/4 to 1 lb sausage diced into bite-sized pieces
2 15-ounce cans black beans, drained
1 15-ounce can diced tomatoes in juice
1 c frozen corn
2 15-counce cans pumpkin puree
1 c milk
1 T curry powder
1 1/2 t ground cumin
You could add some hot pepper to it if you like it on the spicy side. The recipe said
In a soup pot over medium heat add the oil and saute the onions for 5 minutes. Stir in the broth, sausage, black beans, tomatoes, corn, and pumpkin and bring to a boil. Reduce heat to medium low and stir in milk, curry and cumin. Simmer for 10 minutes. Season to taste with cayenne, salt and sugar.
I didn't add the sugar since the apple in the sausage sweetened the mix a bit. I would think this would freeze well. I'm going to make a batch for church when they do their soup/bread sale at Christmas.

Another good way of using black beans: Texas caviar. Lots of recipes on the Internet. Most of them call for corn, peppers, tomatoes, and avocado, or some variation.
