It's very hot here, so I'm going to do a "clean out the frig" night challenge. I like doing this to test my creativity in the kitchen.
Some ideas I have are a quesadilla with peppers. This would be half a quesadilla, LOL, because only have half a tortilla.
Or stuffed small sweet peppers with roasted corn and some other ingredient.
The rules are: no opening new packages. Only stuff that's been hanging around awhile.
Internet searching OK.
Might post back with other dishes I come up with.

I caramelized a sweet onion in butter and olive oil with star anise. I've wanted to try this combination for a long time. I got a package of star anise at a small Asian grocery a couple of weeks ago. From the recipes I looked at, seems like one star anise per onion. I got a small package of lean ground beef, reduced price, at Aldi today, so I made a burger. Lightly heated the bun, and topped the burger with garlic mayo, cayenne, some of the onion, and extra sharp shredded cheddar. That was a treat for me.
I'm not sure I noticed a big difference in the flavor of the onion. I don't make caramelized onions very often. But the burger tasted good. My dishes are done and I'm waiting for the tree service to stop by.
I made a pan of no-bake peanut butter bars yesterday and had one for dessert. My daughter and granddaughter are having a yard sale here tomorrow, wanted something on hand to share

(25,161 posts)Pulled pork, thinly sliced smoked ham, Swiss cheese, dill pickles thinly sliced lengthwise, mayonnaise, Dijon mustard, dashes of salt & pepper/cumin/onion powder & oregano stacked on Cuban bread then grilled in the press. Served with potato chips and a simple salad. Dos Equis beers.
