What's for Dinner, Mon., June 8, 2026

Meatloaf sandwich on 21-seed bread. Lettuce, onions, mayo.

Maybe potato salad, but most likely just this.

Cookies and milk for dessert.

1. French Bread Pizza made from store bought french bread

Before You Begin

A 24 by 4-inch loaf of supermarket French bread, which has a soft, thin crust and fine crumb, works best here. If you can't find soft French bread, you can substitute one and a half 18-inch baguettes, though the crust will be slightly tougher. Cut the baguettes into six equal pieces, and distribute the toppings evenly.

Instructions
for the pizza

Adjust oven rack to upper-middle position and heat oven to 450 degrees. Line rimmed baking sheet with aluminum foil.
Cut 1 (24 by 4-inch) loaf soft French bread in half crosswise, then halve each piece horizontally to create 4 equal pieces. Arrange pieces cut side down on prepared sheet. Brush crust with 1 tablespoon extra-virgin olive oil.
Combine 8 tablespoons unsalted butter, melted; 2 teaspoons granulated garlic; ½ teaspoon table salt; and ¼ teaspoon red pepper flakes in bowl. Flip bread cut side up and brush cut side evenly with melted butter mixture.
Bake, cut side up, until browned around edges, about 5 minutes.
for the sauce

Meanwhile, combine 1½ cups canned crushed tomatoes, 1 tablespoon extra-virgin olive oil, 1½ teaspoons Italian seasoning, ½ teaspoon sugar, ½ teaspoon table salt, and ½ teaspoon pepper in bowl. (Sauce can be refrigerated for up to 24 hours.)
Spread sauce evenly over toasted bread, then top with 12 ounces shredded mozzarella cheese, followed by 1 ounce grated Parmesan cheese and 2 ounces thinly sliced pepperoni.
Bake until cheese is melted and spotty brown, about 15 minutes. Let pizza cool for 5 minutes. Serve.

~ Pasta salad with roasted corn and kale, tomatoes, cucumbers, celery, parsley, celery seed.

~ Burger with Vermont cheddar cheese on a toasted brioche bun

~Lemon water

If I have room for dessert it will be a slab of homemade chocolate cake.

7. Marinated tofu in peanut butter sauce

white rice, mushrooms and onions sauteed in butter.

My away daughter is visiting. For lunch, she had some rice, some plain boiled tofu and seasoned both with the banana blossom chutney I made earlier. She loved it. One banana blossom made about 1 cup of chutney. We're trying to save some for local daughter. Needless to say that both daughters are vegetarians.

Air-fried cauliflower florets added to steam-fried chopped onion, red bell pepper, sliced mushrooms and minced garlic. Cooked sweet peas, whole wheat linguine, chickpeas, fresh chopped parsley and an a dollop of Miyoko’s butter were added before a final stir and plating. Vegan parm on top. Cheers!🥂

We had their hamburger wrap, and seasoned French fries.

I lost $12, & Loretta lost $4 on the slots, We gambled for four hours, and it felt good to get out. We met a real nice lady from Champaign, Illinois. Loretta won a few bucks on one 8 cent bet, and started dancing in her seat and pumping her arms in the air. I told this lady on the other side of me, oh no, she's doing her Trump dance. She broke out in laughter 😃. The three of us had fun talking about the orange pos.
