What's for Dinner, Tues., June 10, 2026

A friend just returned from a couple weeks floating around the Greek Islands on a cruise ship, so tonight we're looking at pictures he took and having dinner together. There are three of us. One is in charge of ordering pizza, another is in charge of making a gigantic salad (who would that be? ), and a third is in charge of desserts.

Appetizer of crackers and 3 kinds of Boursin: cranberry & black pepper, garlic and herbs, and black truffle & sea salt.

I also am putting out a dessert: fruit macarons.

Lemonade is the drink for the evening, and the two guys are having some kind of beer, but not me. I'll also have cherry-ginger kombucha.

He said it took 30" to climb up there, but it wasn't difficult because of the way the paths were structured.

I been to the Acropolis Parthenon of Athens. I also been to the Greek Islands of Crete, Rhodes, and my favorite Corfu. This was years ago when I was in the Navy.

visits. I didn't have a lot of money for sightseeing, but managed to get around by renting mopeds. The panoramic view from the Acropolis is one of the most stunning in the world. You are looking down from the ancient city and looking at the modern metropolis of Athens on the Aegean Sea.

Hope you had a wonderful pizza party. Did your friends see Corfu? I met up with two young American college kids in Corfu. Their parents must have been loaded. Anyways to make the story short, these hippy college kids spent the entire summer visiting Europe in a van they bought overseas. I took them aboard my navy ship for a tour, and a free meal. That's probably why I liked Corfu so much. I had friends with a van to sight see.

Angel hair topped with a creamy vodka sauce and grilled chicken. Caesar salad and garlic bread.

I put a chicken breast in buttermilk on Sunday, just got to bread and fry it today. I had part of the fried breast on a bun, with mayo and dill pickle slices. Since I had seasoned breading, I made a serving of fried dill pickle slices.

For dessert, I had frozen blueberries, a serving of blueberry wafer cookies and whipped topping

Sweet potato cubes, chopped onion, celery, green bell pepper, sliced cauliflower florets, minced garlic, chickpeas, cayenne pepper, dried oregano and chopped parsley all tossed in evoo and baked for a little over an hour. Fresh lemon juice on top after it comes out of the oven. Cheers!🥂
Greece is on my bucket list.

Peter, Ducky's buddy came for dinner.

Late posting because our internet was down since Monday and a tech finally sorted it this evening. Ducky wanted to be best buddies with the tech so he had to hang with us on his leash. He was tired before Peter arrived and then after 3-1/2 hours more he's exhausted.
