(23,687 posts)I boiled a red skin potato, peeled and mashed it, mixed in some shredded cheese (Monterey jack and Mozzarella), a little butter and cream, then made cheesy potato waffles. Nice experiment. It was a little messy and I had to figure out how to clean the overflow off the outside of the waffler
Next time, I will use less mix per potato waffle.
Shredded some cabbage and used Kroger creamy Italian dressing to make coleslaw. It is quick and easy, and low-carb.

Steamed broccoli on the side.
I've been listening to some YouTube videos of music from much earlier in my life. A song from The Incredible String Band just ended.

(2,048 posts)Steam-fried in evoo and veggie broth: chopped onion and shallots, red bell pepper, sliced cabbage, sliced crimini mushrooms, and minced garlic. When done I added cooked chickpeas, fresh chopped basil, oregano and parsley from my garden. Served over chickpea penne with vegan parm on top. Cheers!🥂
