… and as I sit here having nothing but watermelon and a granola bar today because I’m lazy and easily distracted (Cubs won!), chili sounds like the perfect Sunday dinner!

I don’t know that there’s even a recipe necessary, is there? I just throw stuff into my IP (or crock pot):

1 lb red beans
1 lb black beans
1-2 c TVP (think burger crumbles—sometimes, I’ll use chunks of Quorn, which are more like chicken nuggets without the breading)
1 lb frozen corn
1 sm can tomato paste
1 shit ton pickled jalapeños
Onion powder
Chili powder
Salt
Red pepper
Cheese (mine’s vegan—you do you)
Water to cover

Dump in the pot, fire it up, and wait until the smell drives you nuts. For the IP, it only takes a couple hours. Crock pot? I usually start it at bedtime or breakfast, depending on when we’re likely to be most hungry.

Corn bread or tortilla chips to round out the proteins.

For leftovers—especially once it gets thick—we might roll these up in a tortilla and top with salsa and lettuce, or else use for dipping with tortilla chips.
