What's for Dinner, Tues., June 23, 2026

A Mollie Katzen favorite: Eggplant Almond Enchiladas.

Cucumber and tarragon salad with Vidalia and olive oil vinaigrette.

My tarragon is going to seed in the garden! Wonder how many little plants will sprout?

Kombucha: Mango.

Dessert: lemon fruit bar.

I guess I’ve been lazing in bed with a book too long... Just had a big bowl of Kashi cereal (three boxes for a buck at our local discount market!) and dinner looks a long way off yet.

Enchiladas sound really good, but we just had a huge batch of chili last week and son is geared up to do something along the lines of a homemade pot pie for dinner.

Air-fried salmon burgers on whole wheat Kaiser rolls with red onion and salsa. Also made steamed asparagus with mushrooms as a side. Cheers!🥂

Chili with beef and kidney beans
Slice of coarse white bread

Yesterday evening as I was finishing my asparagus sandwich we had a storm come through. It wasn't very strong here but our power died and wasn't restored until the wee hours. Ducky seemed confused/worried by the battery lights. He stands with his mouth opened and the lower jaw moves up and down when he's unsure of stuff. Some treats helped.

I had the dish washer and laundry going and needed to get that all sorted when the power got back. I ended up having little sleep. I even remembered to get the partially refrozen masses of cubes out of the ice maker this morning before they became block ice. It's going to be an early bed tonight.
