Cooking & Baking
Related: About this forumIt's been so hot here that we have been eating mostly cold or minimally cooked foods (the microwave is my friend, lol).
Today will be no exception.
Corn Salad, potato salad, chicken salad (for sandwiches), cottage cheese with fruit. Cheese and crackers .Ice cream. Cold drinks- tea, water, non-alcoholic beer and champagne.
What are your go to meals for really hot weather?

I live in Chester, NY. Apparently we only get a 100 degree day about once in a decade, not 2 days in a row. We also had a near miss the day before, with the temperature exceeding 98 degrees.
All in all, I don't remember a hotter week in New York State in my lifetime of nearly 80 years.

(218 posts)I bought a larger on Amazon. I hate turning on the oven in 100 degrees heat. Love my air fryer.

(2,503 posts)I hate microwaves and refuse to get one. Crock pot used to be my go-to, but then I got an Instant Potand an air fryer lid to work with it. Its not big enough to fry up anything for a family, but for one or two, it does a bang-up job. Ive jettisoned the majority of my more specialized kitchen gadgets and for the most part, a big toaster oven and the IP suffice.
Only drawback is that its made me lazybut hey, its summer. Lazy works.

So I bought a pint of tzatziki sauce and things to dip in it. Today it's cherry tomatoes, cucumber slices, black olives and naan.

(4,736 posts)fresh greens with marinated bean salad, cold pickled beets, tofu with cilantro-ginger paste. But honestly, I still love hot brothy soup in hot weather. I could eat it everyday. They say hot tea is good for both hot and cold temps because it makes you warm in the winter, makes you sweat and therefore cools you during hot weather. Same with soup.

(16,778 posts)green onions and a light balsamic dressing. Just ate it cold as a meal. Could have used a good crusty loaf of bread but nobody is heating up the oven.
