32. I have found there is no food that I don't like - IF I can learn to cook it properly. That is a big

IF. I finally learned to put a little soy sauce in artichokes - after 50 years of cooking. Now I am planting my own artichoke roots this year.

Now for beets and hominy - so eeck - but I know somewhere out there is a way to cook them that I would like - it is just finding it. (I have tried a thousand times - just can't find the recipe that suits me.)

23. PA Dutch Red Beet Eggs

Only possible use for beets (yummy):

2 cans sliced beets (not pickled) with juice
12 peeled hard boiled eggs
1 cup sugar
2 cups cider vinegar
3 cups water

Place beets with juice and eggs in large jar.
Boil water, vinegar and sugar til sugar is dissolved. Pour over beets and eggs, stir lightly to blend. Let eggs marinate 2 days or more. Slice eggs on half to serve and pass salt shaker. Throw away beets.

sun. Cut into slices, salt and pepper, roll in corn meal, fry - absolutely delicious - and not one little bit slimy.

Eat with sliced fresh-from-the-garden tomatoes.
