What's for Dinner, Wed., May 29, 2013

Salad--green leaf lettuce with tomatoes, red onion, and artichokes.

Fish (flounder) francaise with garlic shrimp.

Mashed potatoes, homemade french fries, rice, mixed vegetables .

A bottle of red.

4. Pasta salad

Tricolor penne with feta, green and black olives, Campari tomatoes tossed with a little olive oil and red wine vinegar. Might add some fresh marjoram from the garden.

Here's how to cook pasta on a hot day without heating up the kitchen. This also saves energy.

Bring the water to a full boil, add pasta, return to a boil, cover immediately and turn off the heat. Let it sit covered for the amount of time it says on the box. Drain and serve.

Diced up the left over tortilla wrap from yesterday. Spread all on fresh tortilla and it's ready for a for a couple of eggs, a bit more cheese and salsa. Under the broiler, quick. Fresh cilantro, tomato, cucumber, red onion with vinegar & oil on the plate.

Needed to use up some stuff, so threw it all in. Cukes, mushrooms, tomatoes, yellow squash, zucchini, avocado, green onions and some leftover peas.
