Mesquite BBQ Chicken

Ingredients
6-8 chicken legs, separated, skin on
Olive oil
Sweet Mesquite seasoning ( Costco's is wonderful)

Directions
Rub the chicken with a bit of olive oil. Then sprinkle a generous amount of seasoning on the chicken and let marinate for at least an hour. Overnight is better. Cook on a gas grill over low heat, turning frequently. Keep an eye on the chicken to avoid flareups. After about a half hour, sprinkle more seasoning on the chicken. When nice and crispy, remove and let sit uncovered for 10 minutes before serving.

I usually use soaked mesquite chips over hot coals. One for the smoke, the other for the BBQ heat. pinto May 2013 #3

I'm actually doing this today with a slight difference. I'm smoking mine. Oh, and I let mine sit wrapped in foil for a day and a half. If I'm not smoking this is my preferred way of grilling.

And my wife makes a mopping sauce with that to keep it from drying out. Just pulled the chicken out the smoker and it smells insanely good. She puts a lil sriracha sauce in with the mopping sauce too. For a lil kick. Oh it's sooo good.

I have used a rub too. I don't recall the name. And tried Buck seasoning, which I love. But can be a bit salty. I'm really just trying out different things. We just got the smoker this spring, and I'm in love with it.

Drain the soaked mesquite well and scatter so they don't smother the coals. When all settles and there's some good smoke going, I add the foods on the grill.
