What's for Dinner ~ Monday August 5th

I'm in the mood for Italian after watching Extra Virgin....soooo, maybe Sausage with Peppers & Onions in Red Sauce, and garlic bread. I'm normally not a fan of red sauces, but I love it with the fried peppers and onions.

We have a bunch of cucumbers, tomatoes, and eggplant from the garden we should do something with, so probably something salad-like with fried eggplant and a random protein.

I had a meeting today and things to do in the evening, so I made something easy: sundried tomatoes on crackers, pickled peppers, cold meatballs with Dijon mustard, grape tomatoes, crackers with lobster spread, etc.

Yesterday I made a salad with purslane called "Icarian Potato Salad." I only had one taste of it and didn't really see what the purslane had to add to it, so I'm a little disappointed. Purslane is supposed to be chockful of vitamins and minerals, though.
