For Thanksgiving I need a good baked brie recipe!

I don't do pastry so does anyone also have a suggestion for best pre-made puff pastry? I'm not too far from Whole Foods and Trader Joe's...

not sure what Whole Paycheck carries for PP.

I have bought all kinds of brands over the years even store brands I just look at the ingredients and buy which ever one has the least amount of chemicals in it.

Results are all about the same no mater the brand.

Ask your local pastry shop or baker if they will sell you what you need. Many will if you ask but they may use frozen PP too.

3. what is your opinion on fruit preserves on top of the brie (and under the puff pastr)?

Options are:

raspberry
sour cherry
apricot
peach

I like the red ones for color contrast but I also love the taste of peach and apricot...

5. Go for it! Brie and PP are blank slates use what you like.

A fruit compote would work a little better I am guessing you are looking for a pie filling type consistency. Preserves will work but may give a bit more liquid when heated then you may want.

A spicy peach/apricot compote would be interesting...
