I have one, and I am wondering what to do with it, how to cook it, etc. Ideas are appreciated

(752 posts)It's spaghetti squash casserole and starts with you cutting it in half and baking it in the oven at 375 for about 30 min until the insides are done. Then you sauté onions and garlic, add some mushrooms to the sauté, salt and pepper, a little oregano, basil and thyme. Then chop 2 medium tomatoes and add to the sauté and simmer until the liquid is gone.
Then, combine the insides of the squash, the sauté, and 1 c ricotta (or cottage cheese), 1 cup grated mozzarella, 1/4 c fresh parsley (chopped), and 1 c bread crumbs.
Put in a casserole, top with grated parmesan and bake uncovered a 375 for 40 minutes. Good stuff!

(752 posts)The Moosewood is a bit antiquated -- and depends a lot on large amounts of CHEESE! I like the kale and balsamic vinegar one below.

(7,572 posts)My spaghetti squash is done and I need to take out of the oven. I have kale to cook to combine with it. My recipe prepares and cooks the squash as the above recipe, except at 350 for an hour, (previously having olive oil smeared over the fleshy part and taking the seeds out.)
After pulling out the spaghetti strands, stir in some olive oil and a little balsamic vinegar. Cook the kale by sauteing in oiled skillet with some chopped onion - then serve on top of the spaghetti squash, or combine it in a bowl to serve.

(106,886 posts)Maybe some red pepper flakes in the saute. As odd as it sounds, the best way to get good strands out of the squash is a small garden fork. Like you would use to turn over soil in a row of plants by hand. Separates up nicely and with some olive oil doesn't stick together or clump up.

(111,254 posts)Scoop out seeds in the middle (and save, they're nice roasted) and use a fork to tease the "spaghetti" loose.
You can serve with your favorite pasta sauce for a low carb spaghetti dinner. The flavor is that of a summer squash. I think it tastes a bit like yellow squash.
