I get a pound of good quality ground chuck from my local butcher and turn it into 1 1/2 pounds of meatloaf. I divide this into two 3/4 pound mini-loaves and freeze. Thaw, top with sriracha/ketchup glaze, and bake at 350F until meat gauge hits 155F.

Always good!

Chicken stew from Whole Foods; put in casserole dish, cover with pie dough and bake for 30 min.

(for appetizers) ham and honey-goat cheese miniature sandwiches on pumpernickel rolls.

Crackers with horseradish dip.

For entree: roasted asparagus-tortellini pasta.
