Coat custard cup with spray olive oil, then add about an inch of seasoned croutons on the bottom of the cup, followed by a microwaved turkey sausage patty cut into small pieces, an egg and some milk mixed with a pinch of salt, pepper and ground mustard go over the croutons and sausage. Then top with a mixture of chopped green onion and shredded cheese (cheddar, swiss, mozzarella, whatever you like). Bake in preheated oven at 350 F. for about 25 min.

i'm going to get a loaf of bread started here shortly. i'm hoping the tomatoes are still good, otherwise it'll just be a bacon sandwich, but i'm ok with that.

....grilled zucchini, and with a tomato sauce that I decided I don't like at all.

It was progresso's fire roasted tomato sauce. Very, very sweet. Blah!

but instead of using the bacon, I use lemon zest.

It brightens it up, without the 'heavyness' attached to bacon grease.

(However, if you say bacon-wrapped shrimp, I'm all over that.)

Hubs had a mid-afternoon eye appointment and I had to go to drive him home. We ran late which is normal for our ophthalmologist who is always busy. It pays to plan ahead and the chili was pretty good. I had a nice loaf of ciabatta bread and shredded Monterrey Jack and Cheddar to accompany it.
