6 pork cutlets
1 cup flour
1 green pepper, sliced
Medium dry sherry
black pepper
Directions
Add plenty of black pepper to the flour. Dredge the cutlets in the flour and sauté them in olive oil over hight heat. Remove cutlets and keep warm. In the same pan, sauté green pepper over medium heat until soft--about 5 minutes. Add the pork cutlets to the pan, reduce heat and add 1/2 cup sherry. When the sherry is almost cooked off add another 1/2 cup sherry. Do this a couple times until it creates a thick sauce. Serve immediately

Been a while since I've done it, but as I now know its easy to find (first saw it in NYT magazine!,) I'll get back to it for special occasions.
