No...don't unwrap the meat before you cook it

I go straight from the fridge to the oven with the tightly-wrapped package; you need to keep it sealed up during the cooking so everything will stay properly moist...if you bake the ribs "naked" you're going to end up with jerky. The moisture simulates the smoky self basting environment of a pit.

Generally you should toss marinades after using them, it's a food safety thing. If you boil it, you can use it as a sauce or ingredient though.
